O’lovely Gnocchi

At OLOVES, we’re dedicated to providing our OLOVERS with some of the the healthiest, tastiest recipes. That’s why we suggest you try this simple, flavoursome gnocchi recipe for an o’lovely mid-week meal.

Bursting with fresh flavours, this vibrant dish is sure to please the whole family.

 Olive Gnocchi

INGREDIENTS

1tbsp olive oil

A pinch of dried, crushed chilli

1 clove garlic, crushed

500g  gnocchi

100g semi-dried tomatoes, chopped

3 packs of our black chili and garlic OLOVES

Zest of ½ a lemon

Handful of fresh basil leaves, torn

50g freshly grated parmesan (omit if vegetarian)

Extra virgin olive oil, for drizzling

 

METHOD

1. Heat the oil in a large frying pan and add the chilli and garlic. Cook for 1 minute.

2. Add the gnocchi, and cook, stirring occasionally, for about 5-7 minutes, or until slightly puffed and golden. Add the tomatoes, OLOVES, lemon zest and basil and cook for a further 1-2 minutes.

3. Stir through the parmesan. Serve, drizzle with a little oil and garnish with extra basil leaves, if desired.
